chipotle's basmati rice recipe

1 teaspoon vegetable oil or butter
2 tsp. fresh cilantro
2/3 cup white basmati rice
1 cup water
1/2 teaspoon salt
1 Lime

Instructions: 
In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted. Add rice and lime juice, stir for 1 minute. Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes. Fluff rice with a fork.

When do you add the cilantro? every recipe left out when to add the cilantro!!!!

If you watch them as they make it in the store then I’d say the answer is - after the rice is cooked. It seems the cilantro shold be chopped and then (with some more salt and lime juice) mixed into the rice.

I thought in the store I saw them put sugar in- I know it could be salt but it was a ton and I am pretty sure it was sugar- it was after the rice was cooked and they were mixing it in a big silver bowl and also adding the cilantro at the same time. Hmmm…..

Possible Correction

I think the amount of water needs to be increased to 1 1/3 cups. (The water/rice ratio is always 2-1).
It is cilantro, salt and additional lime juice they add after cooking.

It’s not sugar, it’s salt. And add the salt, lime and cilantro right before serving. I love Chipotle, I used to work there and know the recipes by heart.
