my first bit of gristle in a chipotle chicken burrito

previously i’ve shied away from the carnitas because it seems to be a little fattier than i’d like. it’s delicious, but it tastes a little like bacon that has more fat than meat in it. maybe i should try it again to see if that’s changed. but today i got a real piece of gristle in my chicken. it wasn’t a huge deal, but it was certainly surprising.

which made me think - i’m sure that it’s hard for the cooks to separate the bits of meat from the chicken. i’ve only carved a bird or two in my life and i know that i suck at it. in other fast food joints most of the food that you eat is so processed that it would be impossible for a piece of gristle to make it through to your mouth. even if you did get a piece of gristle it would be ground down to the point that you wouldn’t even notice it in among the rest of the meal.

yet chipotle’s chicken is just straight up cuts of meat. not ground. not sent through a processing machine. cut by hand. hands belong to humans and humans make mistakes.

my grandfather hunted much of the food that his family ate and if you were lucky enough to eat at their table you might get a piece of duck that had a shotgun bb in it. on the one hand it nearly broke your tooth if you bit into it very hard. on the other hand it’s kind of like winning the lottery! i consider today like the lottery. the lottery for gristle at chipotle. and i’m the big winner.
